Malva Pudding: A South African Culinary Delight

A Taste of South African Heritage

Malva pudding is a traditional South African dessert that is usually served hot. It is rich and sticky goodness that is really hard to resist. (You've been warned!)

One thing I love about this recipe is that I'm able to create a decadent dessert with ingredients that I already have in the house. If you are trying to impress guests, make this!

This is one of those recipes I felt intimidated by. I didn't want to try it for the longest time because I feared messing it up. Once I tried, I felt so silly because it's actually a really easy recipe! My children make it too and they have never been able to mess it up.

The only time I messed up a little was the very first time. I chose a baking dish that was too small. The batter will double in size, but I didn't know that at the time. So once the malva pudding was fully baked, it rose all the way to the top of the bowl, leaving very little room for me to pour the sauce. It worked out though—I poured the sauce very slowly. Therefore be warned—it may look like the bowl you are pouring the batter into is too big, but keep in mind it will double in size and you need enough room to pour the sauce.

Finally, serving your malva pudding. You can serve it with whipped cream, vanilla ice cream, or custard. In South Africa, custard is sold widely. I know that's not the case in the USA. We usually have ours with vanilla ice cream and we love it that way. It's especially good if the malva pudding is warmed up in the microwave, and the ice cream melts over it. Yum!

The Origins and History of Malva Pudding

While often considered a uniquely South African treat, Malva pudding's roots lie in Dutch culinary traditions. The name itself hints at its origins, possibly derived from the Portuguese wine it was traditionally paired with. However, some believe it was named after a woman called Malva. Regardless of the origin, South Africans have embraced this dessert, adding their own unique twist with the inclusion of apricot jam. Malva pudding has become a beloved staple in South African households, often enjoyed during special occasions and family gatherings.

The Ingredients and Preparation

The beauty of Malva pudding lies in its simplicity. You'll need basic pantry staples like butter, sugar, eggs, and flour, along with a few key additions that give it its signature flavor and texture. Apricot jam is a must-have, adding a delightful sweetness and a hint of tang. A splash of vinegar and a touch of baking soda create the unique airy texture that makes Malva pudding so special. For the sauce, you'll need heavy cream, butter, sugar, and a hint of vanilla extract. With these simple ingredients, you can create a truly decadent dessert.
