How to Make Traditional Nigerian Fried Rice
Nigerian Fried Rice⁚ A Flavorful and Celebratory Dish
Nigerian Fried Rice is a rice dish that has a continental taste and look. This Nigerian rice meal is a party favourite. Learn how to cook the perfect Nigerian Fried Rice.
Introduction
Nigerian Fried Rice is a staple lunch, dinner, and even party dish in Nigeria. Very simple yet delicious recipe. This version uses mixed vegetables and Beef liver; you can use Shrimp or any protein youd like. You can omit the beef liver if you love to make vegan fried rice.
This fried rice is entirely different from the popular Asian Chicken Fried Rice because the depth of the taste in the latter comes from the Soy sauce while the depth of taste of the latter comes from the Curry powder, Thyme, Seasoning cubes, and of course the abundance of vegetables like Carrots, Green beans, Peas, sweet corn, and Onions.
Just like Jollof Rice we savor these meals so much, and we can barely do without them in gatherings and festive seasons, and its a meal you can make in no time. This recipe starts with already parboiled rice, so it makes the whole process easier. If you dont have already parboiled rice, you can see how to do that here. Its also okay to use a day old rice that has been refrigerated it is very convenient, and the result is just as good.
I also cooked this parboiled rice in a bit of well-seasoned stock so that the Rice can absorb more flavor. Though its advisable to do this, however, this step can be skipped if you are in a hurry.
You can use either freshly cooked rice (parboiled) or leftover cold rice for this recipe. If you choose to use freshly cooked rice, make sure you choose the right type of Rice. I like to use the long grain parboiled rice. This type of Rice is very easy to work with when making Fried Rice likewise, Jollof Rice because its firmer and less sticky, therefore, making it very difficult to go wrong when working with it.
Ingredients
Here is a list of ingredients you will need for this recipe⁚
- 2 cups cooked rice
- 1/2 cup chicken stock
- 3 tbsp oil for frying
- 1 cup onion diced
- 1 cup mixed Vegetables Carrots, Sweet Peas, Sweet Corn and green beans
- 1/2 tsp thyme
- 1 tsp Curry powder
- 2 scallions diced
- 1 chicken stock cube
- 1 cup beef liver cubed
- salt to taste
- 1/4 tsp Cayenne pepper
You can also add other ingredients that you like, such as shrimp, chicken, or vegetables.
This recipe is for a basic Nigerian Fried Rice. Feel free to add your own personal touch to it!
Preparation
Before you start cooking, you need to prepare your ingredients. Here are the steps to take⁚
- Wash the rice with cold water until the water runs clear.
- Place the rice in a pot and add the chicken stock, coconut milk, salt, diced habanero pepper, and bring to a boil for 2 minutes.
- Add the parboiled rice to the pot and cover tightly. Cook until the liquid is dried up. Stir in well.
- Cut the vegetables. Wash all the vegetables to be used in cooking the fried rice. Scrape and cut the carrots into tiny cubes. Cut the green beans into small pieces of about 0.7cm long. Soak these 2 vegetables separately in hot water for about 5 minutes and drain. Cut 1 bulb of onion.
- Clean, peel, devein, season, and cook the shrimp.
- Clean and cut up the vegetables and the liver.
Once your ingredients are prepared, you are ready to start cooking.
Cooking the Rice
The rice is the foundation of this dish, so it's important to cook it correctly. Here's how⁚
- Add a tablespoon of oil in a pot then pour in the washed rice. Stir fry for 1-2 minutes.
- Add half of stock cubes, thyme and half of chopped onions and stir for another minute.
- Add Chicken broth and water then cover pot tightly and leave to cook on very low heat for 30 minutes or till cooked.
- Cover and cook until stock is absorbed and rice is half cooked, about 10 minutes.
- Transfer rice to a rimmed baking sheet, spread into an even layer, and let cool for 10 to 15 minutes.
- Using a fork, fluff rice to separate grains and set aside.
- Place the reserved chicken stock in a pot, bring to a boil, and add the parboiled rice, seasoning cubes, curry powder, garlic powder, onions, and salt. Cook until done.
The rice should be cooked tender but still firm to bite (like you cook your pasta al-dente). Overcooking the rice will result in mushy fried rice.
Sautéing the Vegetables
The vegetables add flavor and texture to the fried rice. Here's how to sauté them⁚
- Preheat the oil in a pan on medium to high heat, throw in the onions, and fry for a minute or two; add the scallions, mixed vegetables, thyme, curry powder, salt, and stock Cube.
- Heat up cooking oil in a large skillet, sauté the onion, add pepper cook for about a minute. then stir in the mixed veggies, Liver pieces and chopped green bell pepper. Season with some bouillon, stir fry till the moisture dries out and the veggies are slightly crisp but not burnt.

The vegetables should be cooked but not mushy. You want them to have a nice crisp texture.
Add the beef liver and rice and stir-fry for about 3 to 5 minutes on high heat.
Combining the Rice and Vegetables
Now it's time to bring everything together. Here's how to combine the rice and vegetables⁚
- Add the boiled rice to the stock in a medium pot and cook on medium heat until the water is dried up.
- Add the almost-done white rice and stir. Stir all together, cover your pot and allow to simmer for 5-7 minutes.
- Pour the stir-fried veggies into the pot containing the rice and stir thoroughly. Cook for another 1 minute over low heat.
- Throw in the beef liver and rice Stir-fry for about 3 to 5 minutes on high heat.
- Heat cup vegetable oil in a large pot.
- Fry for at least 8 minutes. Fry till the rice becomes soft and dries up a little bit. You may experience a bit of burning, but fret not, its part of the process. Add another portion of veggies and rice into the wok and fry. Repeat the process until all the rice and veggies are fried.
You want to make sure the rice is evenly coated with the vegetables and the flavors are well-blended.
Fried rice is best enjoyed when the Veggies remain crunchy, so don't overcook your veggies. You need to increase the heat and stir continuously to get that nice coveted crisp during frying.
